a).Ingredients
 2 cups Black Eyed Beans soaked for 4 hours
 2 Medium-sized fresh tomatoes,
 2 Onions, finely
 A Cucumber
 3 Green Chilies
 3 sprig Coriander Leaves,
 2 tbsp. Of Chaat Masala
 ½ tbsp of. Amchur (Dry Mango Powder)
 ½ tbsp of Lemon juice
 Salt, to taste

b).Directions
 In the order to make Bean or lobia chaat take 2 cups of black-eyed beans and soak them for 4 hours.
 Pressure cook the lobia along with a little salt for about 30 minutes and keep aside.
 In a bowl, add boiled and cooled black-eyed beans. After draining whole water add chopped onion, tomato, and cucumber.
 Season the Lobia Chaat with chopped green chilies, freshly chopped coriander leaves, chaat masala, dry mango powder, and lemon juice. Add salt to taste.
 Finally, toss the Lobia Chaat well. Adjust the salt and chaat masala according to your taste. You can make it spicier by adding more chopped green chilies and serve chilled.
 Serve the Lobia Chaat as a healthy snack or even as an appetizer for parties along with Mixed Vegetable Pulao Recipe, Paneer Jalfrezi.
